Syrene’s Amazing Macaroon Recipe

Wednesday Morning Bird walkers have asked for this Macaroon Recipe:
Set oven for 325 degrees F. In large bowl, mix 1 tsp vanilla extract with one 14 oz can of sweetened condensed milk. Stir in one 14 oz package sweetened shredded coconut. In another bowl, beat 2 extra large egg whites [room temperature] till thick. Add 1/4 tsp salt. Whip till egg whites form peaks. Fold in 1/3 egg whites into coconut mixture. Fold in another 1/3 egg whites. Fold in final egg whites. On parchment paper on cookie sheets, scoop out golf ball sized lumps with 2 spoons. Place about 2 inches apart.

Bake 25-30 minutes, until golden brown. Switch pans from top to bottom shelf once. Let cool a few minutes on parchment paper, then gently lift off to cookie racks and allow to completely cool.
